I just delivered three cases of spices to Deluxe foods of Aptos and they put them on sale for $5.49. Enjoy Aptos!

Q: Can spices grow feet? A: Only if you shake them enough!

GrandmaDaves Three spice blends, "Italian Spice", "Latin~Zing", and "Cajun Infusion" are being sprinkled into the local community first. Then we hope that they will grow feet and be truckin around the bay area, California, and around the US soon onto your BBQ!

If you would like them to be in a store near you- Here is what YOU can do:

Try and find a "Whole Foods Market" and/or a natural and Organic specialty store in your area. Ask for the "Grocery buyer". When you have contacted them ask if they get any products from  Falcon Distribution/SunRidge Farms . This is one of the the companies who is greatly responsible for the majority of "bulk " foods being disbursed throughout the country. If they do, that means that are at least able to get GD's products if they want to, now you will have to convince them they are good and will sell. The web site support with recipes is a great help for stores. I also often do demos and cooking classes in the stores that are set up for thst.

Turkey Brine

Turkey Brine

•    2 cups kosher salt
•    1/2 cup brown sugar
•    1/2 cup maple syrup
•    16 ounce apple juice
•    4 ounce soy sauce
•    1 T finely chopped garlic
•    1 cinnamon stick
•    1 T pink peppercorns
•    1 t fennel seed
•    10 cups ice

Method:

  1.     Combine all ingredients in 4qt. sauce pan
  2.     Bring to a boil and turn off
  3.     Add ice and let throughly cool in refrigerator
  4.     Submerge Turkey Breast in brine for 6-8 hrs

 

**If brining Whole Bird, submerge for 8-12 hrs and turn once after 4-6 hrs
   



Spiced Pita Chips

Spiced Pita Chips

•    3 T Grandma Dave's Spice Blend of choice
•    1 pack Pita Bread
•    2 T extra virgin olive oil
•    1 t finely chopped garlic
•    Kosher or sea salt to taste

Method:

  1.     Pre-heat oven to 350°
  2.     Cut Pita Bread into single layer triangles
  3.     Coat with extra virgin olive oil and garlic
  4.     Toss pitas while sprinkling spice over Pitas
  5.     Sprinkle with salt and bake 30min at 325°



Raita - Yogurt Cucumber Sauce

Raita - Yogurt Cucumber Sauce
Yield: 1 pt ( 2 cups )

•    2 cups whole milk yogurt
•    1 European cucumber, peeled, seeded, and sliced small
•    1 T garlic finely chopped
•    1 T kosher salt
•    1/2 bunch mint
•    1/4 bunch cilantro

Method:

  1.     Combine all ingredients in large bowl and mix well
  2.     Let stand 1 hour before serving

 

Carrot and Red Pepper Chutney

Carrot and Red Pepper Chutney

Yield: 1 pt ( 2 cups )

•    1 cup carrots brunoised small and cooked tender
•    1 red pepper charred and brunoised
•    2 red hot peppers brunoised small
•    1 T dry mustard
•    1/2 cup rice vinegar
•    1/2 cup brown rice syrup
•    1 T Indian spice
•    1/2 bunch cilantro, finely chopped


Method:
   
    Combine all ingredients and let stand two hours before serving
   

Pineapple Apple Mango Chutney

Pineapple Apple Mango Chutney
                  
•    1 T olive oil
•    1 small red onion diced
•    2 apples cored, peeled and small diced
•    1/2 pineapple small diced
•    1 mango medium sized small diced
•    1 cup balsamic vinegar
•    1/2 cup brown sugar
•    1 cinnamon stick
•    Pinch of nutmeg

 

Method:

  1.     Heat pan, add olive oil and sauté red onion until translucent
  2.     Deglaze with balsamic vinegar
  3.     Add brown sugar and reduce by half
  4.     Add cinnamon stick and apples and cook on low until tender
  5.     Add pineapple and remove from heat
  6.     Let cool, fold in mango last

The New Leaf Community Markets,  5 stores have picked up all three flavor spice blends. They will be on the shelves next week after the Gormet Grazing on the Green (Cancer Benifit) event in Aptos Park on Sept 19th at 12:00.
