Spices coming soon!

Well it has taken a while, but a freash round of spices will be in the local stores beginning around Sept 1st. They will now be "Grandma Dave's" Label and will have been procured by Whole Foods Santa Cruz and Capitola as well as the New Leaf community Markets Chain and Deluxe foods of Aptos.

I could barely stop laughing as it made it so basic and user friendly for me. I can go on and on and I will more later... as for now,

I Snapped a crank on my uni!!

Hope all is well for all of you!
I snapped another crank on my 36" uni the other day! Bummer! I went down fast too! Now I am adjusting to smaller cranks and have realized that the motion is completely different!

Cajun Marinated Game Hen

Yields 4 7-8 oz servings
Ingredients:

  • 2 Game hens

Marinade:

  • 2-3 Tablespoons CAJUN BLEND
  • 2 Tablespoon olive oil
  • Salt and pepper

Method:

  1. Mix the marinade well and rub onto the whole hens.
  2. Marinate hens for up to a day.
  3. Cut hens in half and remove the backbone.
  4. Bake or grill hens and serve with you favorite accompaniments.

Cajun Marinated Tofu

Yields 4 4 oz servings
Ingredients:

  • 16 oz tofu, firm and organic, sliced into ¼ inch slabs

Marinade

  • 2-3 Tablespoons CAJUN BLEND
  • 2 Tablespoon olive oil
  • Salt and pepper

Method:

  1. Mix the marinade well and rub into the steaks.
  2. Marinate tofu for up to a day.
  3. Grill, broil, or dice into cubes and sauté.
  4. Serve with you favorite accompaniments.

Cajun Marinated Fish

Yields 2 6-7 oz servings
Ingredients:

  • 12-14 oz fish of choice (filet or steak cut)

Marinade:

  • 2-3 Tablespoons CAJUN BLEND
  • 1 Tablespoon olive oil
  • Zest from one lemon or lime
  • Salt and pepper

Method:

  1. Mix the marinade well and rub into the fish.
  2. Marinate fish for up to two hours.
  3. Grill, broil, or dice into cubes and sauté.
  4. Serve with you favorite accompaniments.

Cajun Marinated Steak

Yields 2 10-12 oz servings
Ingredients:

  • 2 x 10 oz New York Steaks, or cut of choice

Marinade

  • 2-3 Tablespoons CAJUN BLEND
  • 2 Tablespoon olive oil
  • Salt and pepper

Method:

  1. Mix the marinade well and rub into the steaks.
  2. Marinate meat for up to a day.
  3. Grill, broil, or dice into cubes and sauté.
  4. Serve with you favorite accompaniments.

Cajun Marinated Prawns

Yield: 1 pound
Ingredients:

  • 1 lb prawns, peeled and de-veined
  • Lemon zest, finely sliced (optional)

Marinade:

  • 2-3 Tablespoons CAJUN BLEND
  • 2 Tablespoon olive oil
  • Salt and pepper

Method:

  1. Mix the marinade well and add the prepared prawns and lemon zest.
  2. Marinate prawns for up to an hour.
  3. Grill, broil, or sauté, and serve with you favorite accompaniments.

Note: If grilling prawns on wooden skewers make sure to soak wooden skewers in water beforehand (approximately 20 minutes) and skewer the prawns so they are in same direction.

Cajun Marinated and Grilled Vegetables

Ingredients:

  • Butternut squash, (or squash of choice) peeled and sliced
  • Zucchini, sliced ¼ inch thick lengthwise
  • Mushrooms, stem removed
  • Onions (red or yellow), cut into ½ inch rings
  • Peppers of choice, quartered and seeds removed

Marinade:

  • 2-3 Tablespoons CAJUN BBQ BLEND
  • 2 Tablespoon olive oil
  • Salt and pepper

Method:

  1. Mix the marinade well and add the prepared vegetables.
  2. Marinate vegetables for up to an hour.
  3. Grill, and serve with you favorite accompaniments.
