Turkey Brine

Turkey Brine

•    2 cups kosher salt
•    1/2 cup brown sugar
•    1/2 cup maple syrup
•    16 ounce apple juice
•    4 ounce soy sauce
•    1 T finely chopped garlic
•    1 cinnamon stick
•    1 T pink peppercorns
•    1 t fennel seed
•    10 cups ice

Method:

  1.     Combine all ingredients in 4qt. sauce pan
  2.     Bring to a boil and turn off
  3.     Add ice and let throughly cool in refrigerator
  4.     Submerge Turkey Breast in brine for 6-8 hrs

 

**If brining Whole Bird, submerge for 8-12 hrs and turn once after 4-6 hrs
